Vivat Bacchus Opening New Site at London Bridge

Vivat Bacchus, the 'fine dining' restaurant in Farringdon, is set to open a new branch in Hays Lane, London Bridge.

The Farringdon establishment is heavy on the red meat, as chef Robert Staegemann takes his influences from the Pacific Rim, Africa - Springbok is always available.

As the name suggests, wine is the thing, largely South African. The Farrigdon branch has upwards of 20,000 bottles, 1000 labels. I'm assured there are other New World wines available.
And of course the Farringdon branch stocks 80 varieties of cheese to go with it. Why the hell haven't I been here? This new site is likely to be in a similar format, and more branches are planned (though they are 'taking their time about it', apparently).

Anyway, the new branch planned to open around the end of June, however my 'spys' tell me it is still in the building stages and looking at a possible August-September opening date.

3 courses likely to start at £25, but expect to pay a good deal more - especially if you're hitting the wine and cheeses. Wines start at around £17.95, with some available by the glass.
