Went for a meal at this recently opened resturant with my wife. Initial impressions were good, some nice decor/lighting, good use of the old building. Tried too hard at times to be different, -silly huge rigid plastic menus which were difficult to see over when put on your table. Music choice was strange, then went so loud we had to ask if it could be turned down a bit, then it went off completely making the resturant nearly tumbleweeed quiet apart from the thudding music downstairs in the trendy bar below...

Menus were small. Starter of foie gras was truly excellent, very skillfully cooked. Main course of duck was fine but not worth the £19 price tag. Main courses were too limited in terms of choice from the small menu -1 special (fish) 2 fish dishes, 2 meat and 1 veg. I didn't want fish or vegetarian that night and I didn't fancy steak without a sauce so duck it was by default. Cheese board was lovely, well thought out and wife's dessert was excellent too. All washed down by a lovely Gigondas from a good wine list. Service was perfectly adequate and courteous.

Very impressive food in some areas. But amongst the most expensive eateries in Canterbury so main course menu needs to develop. Also the overall atmosphere needs to be brought on to reflect the quality of resturant this place purports to be (music etc). Promising though.

I should have guessed about the music, with a name like "Fusion" But the food and service were great, and no more expensive overall than anything worthwhile in the area. So we'll be back, with earplugs !!

i recently had my 18th party at Fusion and I entirely disagree with the man who left the other comment. The chef was incredible! he made the most fantastic tower of profiteroles covered in caged sugar and it tasted amazing. The buffet he put on was delicious yet not what one might expect from a buffet- it was very light and edible food. Overall i would recommend fusion to anyone who wants an easy night out with courteous staff and really good music.If you're looking for a place for a party this is definately Canterburys most reasonable and classier places.

Hello, original poster here. Not sure what you are 'entirely' disagreeing with?
-I said that the chef is talented.
-You went for a party with a buffet. I went for a (relatively) pricey sit down meal with my wife. Somewhat different circumstances to make the comparison.
-Music. I'm only 31 and listen to all sorts of alternative stuff. But for a posh sit down meal, initially it was fairly hard clubby break-beat which was too loud to talk over, then nothing. Silence. I'm sure its the kind of thing thats been sorted now but I'm not a pensioner who was offended by hearing something post 1947.

Glad you had fun though.

Dear sir, madam I am writing from Fusion on st Dunstans street Canterbury The overall review from someone who has eaten here is good, but saying the main course was £19 is incorrect, the duck at the time was £16.50,quite reasonable i feel. For people to read this gives a false impression and would like it to be changed. I have a fillet steak on at present which is £18 so would never place duck breast so expensive, as i too would not pay this price, dishes are costed out and a price tag given. Since this article we have changed our system and now give a selection of green and roasted vegetables to every table. I am always trying to develop new ideas and comments are good for us to move forward Thanks look forward to your reply Nick (Chef)

Nick - I genuinely feel you are a talented chef and the fact that you have taken the time to reply shows you care about your work. However, readers are welcome decide for themselves whether a mistake to the tune of £2.50 alters the initial conclusion drastically.
